Ingredients

  • 4 salmon patties Trader Joe's frozen work well here
  • 4 brioche buns
  • 1/2 English cucumber cut thinly on the diagonal
  • 4 tbsp sun-dried tomatoes chopped
  • 2 tbsp almond chipotle dip Trader Joe's

Instructions

  • Roast the Patties: Bake the salmon patties in the oven according to package directions until heated through and lightly browned.
  • Toast the Buns: Place the brioche buns cut-side up in the oven during the last 2 minutes of patty cooking. Toast for 1–2 minutes until golden.
  • Prep the Base: While the patties cook, slice the cucumber. Place two slices onto the bottom half of each toasted bun.
  • Assemble: Place a cooked salmon patty over the cucumber, followed by 1 tbsp of sun-dried tomatoes.
  • Finish: Drizzle each burger with about 1/2 tablespoon of almond chipotle dip, top with the remaining bun, and serve immediately.
