- 4 large russet potatoes
- 1 lb lean ground beef or turkey
- 1 packet taco seasoning
- 1 small white onion diced
- 1 cup cheddar cheese shredded
- 1 cup salsa
- 1 cup sour cream
- 1 cup Roma tomatoes diced
- 1 cup green onions chopped

- 1/4 cup jalapeños sliced
- 1/2 cup black olives sliced
- 1 avocado cubed
- 2 tbsp cilantro chopped

Bake the Potatoes
Preheat your oven to 400°F (200°C).
Wash and dry the potatoes, then poke several holes in each with a fork.
Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until tender.
Prepare the Taco Meat
While the potatoes are baking, heat a large skillet over medium heat.
Add the ground beef and diced onion, cooking until the meat is browned and the onion is soft.
Drain any excess fat, then stir in the taco seasoning and a little water (as per the seasoning packet instructions). Simmer for a few minutes until well combined.
Assemble the Loaded Potatoes
Once the potatoes are done, let them cool slightly, then cut a slit down the middle and fluff the insides with a fork.
Divide the taco meat evenly among the potatoes, stuffing it into the slit.
Top each potato with shredded cheese, salsa, sour cream, tomatoes, and green onions.
