Ingredients

  • 4 large russet potatoes
  • 1 lb lean ground beef or turkey
  • 1 packet taco seasoning
  • 1 small white onion diced
  • 1 cup cheddar cheese shredded
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup Roma tomatoes diced
  • 1 cup green onions chopped

Optional toppings

  • 1/4 cup jalapeños sliced
  • 1/2 cup black olives sliced
  • 1 avocado cubed
  • 2 tbsp cilantro chopped

Instructions

Bake the Potatoes

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the potatoes, then poke several holes in each with a fork.
  • Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until tender.

Prepare the Taco Meat

  • While the potatoes are baking, heat a large skillet over medium heat.
  • Add the ground beef and diced onion, cooking until the meat is browned and the onion is soft.
  • Drain any excess fat, then stir in the taco seasoning and a little water (as per the seasoning packet instructions). Simmer for a few minutes until well combined.

Assemble the Loaded Potatoes

  • Once the potatoes are done, let them cool slightly, then cut a slit down the middle and fluff the insides with a fork.
  • Divide the taco meat evenly among the potatoes, stuffing it into the slit.
  • Top each potato with shredded cheese, salsa, sour cream, tomatoes, and green onions.
  • Add any additional toppings you like
