Creamy Buffalo Chicken & Rice Bake

- 2 lbs Chicken breast or thighs chopped
- 1 large Onion chopped
- 2 cups White rice uncooked, rinsed
- 2 cups Chicken broth
- 1 cup Buffalo sauce e.g., Frank’s RedHot

- 2 cups Monterey Jack cheese shredded (divided)

Instructions
